The Best Sourdough Sausage and Cheese Rolls
One of the things that I love about going on vacation is having time to make all the sourdough recipes. I was planning to make cinnamon rolls but then my husband took the kids to a local donut shop so I needed to pivot with that bubbly starter. The Best Sourdough Sausage and Cheese Rolls were born! We ate them for breakfast and again the next day for lunch.

A Few Notes
I never want to write a big long blog post and make you read all about my vacation before giving you the recipe but I do need to tell you a few things. The fillings I chose was totally because of what I brought on vacation with us. Since I am a homesteader, I bring a lot of food from home and from the local farmers I buy from. So you can choose to fill it with whatever you like. I was also at the mercy of the spices here at the rental home. It came out delicious! Here are some flavor combinations I think will be fantastic. Ham and cheese, bacon, onion and cheddar, herbed goat cheese and mushroom. The possibilities are endless.
You can also serve this for breakfast, lunch or dinner. I’m so glad I made this because I feel like this is so versatile that it can be made for kids and adults alike and bursting with seasonal flavors too!
Winter – sausage, cranberry, rosemary
Fall – chicken, butternut squash, sage
Summer – pork, bell pepper, sundried tomato, basil
Spring – ground lamb, asparagus, parsley
Of course using all types of cheese to compliment seasonal flavors. Brie would be an amazing choice in spring and summer and cranberry goat cheese would be amazing in the winter.

The Best Sourdough Sausage and Cheese Rolls

These rolls are savory, herby and so amazing, Switch up the fillings each time! Everyone will love when you make these and they can also be served for lunch or dinner too.
Ingredients
- 3/4 cup bubbly and active starter
- 1/4 cup coconut sugar
- 3/4 cup warm water
- 1/4 cup melted butter
- 1/2 teaspoon salt
- 2 1/2 cup organic unbleached flour
- 1 pound ground pork or sausage (if using ground sausage omit the spices)
- 1-2 cloves of garlic
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 cup minced onion or shallots
- 4 ounces herbed goat cheese
- 4 ounces cream cheese
- 1/2 cup-1 cup shredded sharp cheddar
- 3 tablespoons melted butter
- Chopped herbs like basil, parsley or cilantro
Instructions
- In a mixing bowl with the dough attachment mix starter, coconut sugar, water, melted butter, salt and flour. Mix together for 10 or so minutes until it formed a smooth dough. You can also mix in a bowl and knead by hand for 10-15 minutes if you don't have a mixer/
- Add the dough to a greased bowl and let rise overnight or for 8-10 hours.
- Before the dough is ready, cook the ground pork, garlic, onions and spices breaking it apart as it cooks or cook the sausage. Allow to cool.
- Soften the goat and cream cheese and mix together in a bowl.
- Roll out the dough on a lightly floured counter until it is a large rectangle about 1/4 inch thick
- Spread the goat/cream cheese mixture onto the dough
- Spread the cooled sausage mixture over the goat/cream cheese mixture
- Sprinkle the shredded cheddar on top
- Gently roll the dough up and cut into 8-10 even slices
- Butter a large cast iron pan and transfer the rolls into the pan
- Cover and allow to rise while the oven preheats
- Preheat oven to 375 F
- Bake for 25-30 minutes
- Melt butter with herbs and brush on freshly baked rolls
